ใบไม้ที่ประดับบนจานปลาดิบ คือใบอะไร กินได้หรือไม่ ?

ใบไม้เขียวสดรูปสามเหลี่ยมขอบใบหยักๆ รูปทรงแปลกตา หลายคนคงอาจไม่เคยเห็นและไม่รู้จัก แต่ถ้าเป็นคออาหารญี่ปุ่นจะคุ้นเคย  เห็นบ่อย  แต่ก็ยังไม่รู้จักอยู่ดีว่าเป็นใบอะไร

ใบไม้นี้มีชื่อว่าโอบะหรือชิโสะ

ต้นโอบะเป็นพืชล้มลุกตระกูลเดียวกับกระเพราโหระพาและสะระแหน่กระจายพันธุ์ อยู่ในประเทศญี่ปุ่น สามารถใช้ประโยชน์ได้ทุกส่วน แต่ที่นิยม คือใบที่มีรูปทรงกลมปลายแหลม ขอบใบหยักเป็นฟันเลื่อย กลิ่นหอมฉุน

ปัจจุบันมีผู้ปลูกอยู่ในประเทศไทย อย่างเป็นล่ำเป็นสัน

คุณชาลี คำรักษ์ เกษตรกรผู้ปลูกใบโอบะ ที่อำเภอหนองเสือ จังหวัดปทุมธานี  เล่าว่าปลูกต้นโอบะมากว่า 10 ปี แล้ว ที่สำคัญโอบะเป็นพืชที่สามารถปลูกได้ตลอดทั้งปี ในพื้นที่ดินร่วนซุยและน้ำไม่ท่วมขัง ภายใต้สภาพแวดล้อมที่มีแดดรำไร แสงประมาณ 60 เปอร์เซ็นต์

ต้นโอบะ มีระยะเวลาปลูกประมาณ 50-60 วัน จะเริ่มเก็บใบ และจะมีอายุการเก็บได้ประมาณ 4-5 เดือน จากนั้นตัดแต่งกิ่งหรือปลูกใหม่ ขึ้นอยู่กับสภาพของต้นและแปลงปลูก

คุณชาลี บอกอีกว่า ต้นโอบะดูแลง่าย ให้น้ำวันละ 1 ครั้ง ฉีดปุ๋ยบำรุงต้นและใบ สัปดาห์ละ 1 ครั้ง หากต้นมีปริมาณใบมากเกินไปก็แต่งทรงพุ่มให้โล่งเพื่อให้แสงส่องผ่านป้องกัน โรคและแมลง

สำหรับต้นทุนการสร้างโรงเรือนเมล็ดพันธุ์สารเคมีและวางระบบน้ำคุณชาลีบอกว่าใช้ต้นทุนประมาณ50,000บาท ต่อไร่

ในพื้นที่ 3 ไร่ คุณชาลีสามารถเก็บใบโอบะจำหน่ายได้ทุกวัน มีรายได้เฉลี่ยเดือนละ 150,000-200,000 บาท โดยมีราคาจำหน่ายใบละ 50 สตางค์ ถึง 1 บาท

ใบโอบะเป็นพืชที่มีกลิ่นหอมฉุนมักจะเสิร์ฟมากับปลาดิบเป็นผักสลัดหรือเป็น วัตถุดิบปรุงซุปหรือสตูว์แถมเมล็ดยังมีสารอาหารประเภทวิตามินเอบีและซี นำมาสกัดเป็นน้ำมันปรุงอาหารได้
